Could someone help explain the different ICs used in the picture.

This is  a Nokia Model 101 phone's chip board. I'd like to know the components used and if available the data sheets.

Google the number(s) on the chip.  If it is a not proprietary device you should find what you want.  If it is custom the odds of getting the data is extremely unlikely.
